How to use the Recipe Scaling Tool

Does this convert units, like cups to grams?

Can I scale down as well as up?

Yes. Enter a new yield smaller than the original and every quantity scales down by the same ratio, which is useful for testing a recipe at a smaller batch size before committing to a full run.

Why might scaling a recipe not work perfectly in practice?

Leaveners, salt, and spices don't always scale linearly the way flour and sugar do, and bake time changes with pan size and batter depth. Treat the scaled numbers as your starting point, then adjust to taste and check for doneness earlier than the original recipe time.
